1 pound large shrimp, peeled and deveined
1 tablespoon vegetable oil
1 onion, finely chopped
5 cloves garlic, minced
1 tablespoon ginger, grated
1 yellow bell pepper, sliced (add green and red of you'd like)
1 can (13.5 oz) coconut milk
2.5 tablespoons red curry paste
1.5 tablespoons House of Flava All Purpose Seasoning
1 tablespoon smoked paprika
1 tablespoon brown sugar (optional)
Salt and Pepper (to taste)
2 tablespoons lime juice
Fresh cilantro, for garnish
Thai Chili peppers (optional heat)

HOW TO MAKE Coconut Curry Shrimp
Instructions:
Heat the vegetable oil in a large skillet or wok over medium heat. Add the chopped onion and cook until softened, about 2-3 minutes.
Add the minced garlic and grated ginger to the skillet. Cook for another 1-2 minutes until fragrant.
Stir in the sliced bell peppers and cook for 2-3 minutes until they begin to soften.
Push the vegetables to one side of the skillet and add the shrimp. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.
